This simple chickpea avocado sandwich recipe takes the fuss out of lunch.
It’s really quick and easy to put together and uses just a few basic ingredients.
The recipe is super healthy as it incorporates plenty of fibre, protein and good fats – the way a balanced meal should be.
It would make a really nice lunch, especially if you’re trying to eat healthy or lose weight.
And since it’s completely plant-based, it’s perfect if you’re vegan or vegetarian.
This recipe for chickpea avocado sandwiches makes enough for four people so plenty to go round too.
1 can chickpeas, drained and rinsed
1 ripe avocado
2 tbsp chopped parsley
4 tbsp chopped red onion
3 tbsp chopped gherkins
1 tsp mustard
Juice of 1 lemon
Salt and pepper to taste
8 slices of toasted bread, for example a sourdough or seed loaf
Serve with rocket and a drizzle of chilli sauce – optional
Mix the chickpeas and avocado in a large bowl and mash the mixture with a potato masher or a fork.
Add the parsley, onions, gherkins, mustard, lemon juice and season well with salt and pepper. Mix to combine.
Divide the mixture into four equal portions to make four sandwiches.
Top with rocket and an optional drizzle of chilli sauce for added zing.
